Classic Apple Crumble
There’s nothing in the world like a classic apple crumble— it’s real comfort food! It’s always been my sister’s favorite dessert so I spent a long time perfecting this recipe and I break it out on every holiday (and her birthday!)
It has the added benefit of being incredibly quick and easy to make (WAY easier than apple pie) so that doesn’t hurt. I often cut this recipe in half and make a 2 person version for a weeknight dessert. As is, it serves 4-6 and keeps well in the fridge for 3-4 days.
Ingredients
Apple filling
1 Honeycrisp apple, peeled and chopped into 1/2” pieces
2 Granny Smith apples, peeled and chopped into 1/2” pieces
2 tablespoons lemon juice
1/4 cup granulated sugar
3 tablespoons cornstarch
Pinch salt
1 teaspoon cinnamon
Crumble topping
1 cup flour
1/2 cup medium-grind cornmeal
3/4 cup rolled oats
2/3 cup brown sugar
Pinch salt
1/2 teaspoon cinnamon
1 teaspoon vanilla
10 tablespoons melted butter
Directions
Preheat your oven to 400F and set aside an 8x8 baking dish
In a medium bowl, stir together the flour, cornmeal, oats, brown sugar, salt, and cinnamon.
Pour in the melted butter and vanilla and stir with a spoon (or your hands) until completely combined. The mixture should clump together when pressed. Set aside.
In your baking dish, combine the chopped apples, lemon juice, sugar, cornstarch, salt, and cinnamon. Stir with a spoon until the apples are evenly coated, then lightly press them down to create a flatter surface.
Cover the apples generously with the crumble topping, no need to press it down.
Bake for 30-35 minutes or until the top is golden brown and aromatic. You may see slight bubbling around the edges.
Serve warm with ice cream!
